Ingredients (use vegan versions):
  • 1/2 head cabbage (chopped)
  • 6 green onions-tops and bottoms--chopped
  • 2/3 cup shelled sunflower seeds
  • 1 pkg. Westbrae Naturals ramen noodles (withhold seasoning) broken into small bits
  • 2/3 cup slivered almonds
  • Dressing:
  • 4 1/2 tablespoon cider vinegar (or vegan red wine vinegar)
  • 3 tablespoon vegan sugar
  • 1/2 teaspoon pepper
  • 1/2 cup salad oil
  • 3 tablespoon sesame seeds
  • 1 teaspoon salt
  • 1 pkg. ramen noodle seasoning
Directions:

Mix all salad ingredients. Set aside. Mix all dressing ingredients. Pour over salad mixture and toss together. Let marinate in refrigerator for about 4 to 6 hours.
