Ingredients (use vegan versions):
  • baby carrots, cut into slices
  • 1 broccoli, cut
  • 1 green pepper
  • 1 red pepper
  • 1 stalk of celery, cut into small pieces
  • 1/2 cup canned chickpeas, drained
  • any spices you like
Directions:

You can adjust this recipe to you liking, with more beans or different veggies or more veggies.

Cut and slice all veggies, then throw them into a pot. Add your choice of liquid for cooking. Cook until veggies are soft. Cover for a few minutes. Let cool a little and DIG IN!

This is very good with brown rice. Perfect if you don''t have mush time to cook! (You can also use a bag of mixed frozen veggies if you are REALLY short on time.)
