Ingredients
- 1 matzo
- soymilk
- 1 big tablespoon nutritional yeast
- salt
- 1 vegan egg replacer for 1 egg
I just made this up this morning for Passover since I couldn''t find a recipe for vegan matzo brei online.
Wet the matzo, break it into small pieces and let it sit in a bowl for a couple of minutes with a some soy milk (about 3 tablespoons).
Beat the egg replacer and add it to the matzo mix together with the yeast and salt. Then, fry in a lightly greased pan. we love yeast in my family so I like to use a lot of it. You can add all sort of spices I''m sure. Let us know if you try and like it!
