Ingredients
Ingredients (use vegan versions):
- 3 small potatoes, sliced
- 3/4 green bell pepper, cubed
- 1-2 stalks celery, cut
- 1 carrot, sliced
- cumin (to taste) *optional
- ginger (to taste) *optional
Slice, cut, or dice all of the veggies. Place them in a 9x9 baking pan, spray coated. Cover with aluminum foil, and bake for about 10-15 minutes or until the potatoes are done. Usually, I like to grill corn in the oven to go with this dish which also takes about 10-15 minutes. To grill the corn: Fold down the layers of the corn husks without breaking them, peel off the silks, and replace the husks. Then place directly on the grill of the oven.
