Ingredients (use vegan versions):
  • 1/2 large cucumber, preferably seedless
  • 1 dash-1/8 teaspoon pepper
  • 1 dash-1/8 teaspoon cinnamon
  • 1 dash-1/8 teaspoon sea salt
  • 1 teaspoon olive oil
  • 1 packet (15g) Simply Organic "Sweet Basil Pesto Mix"
  • small narrow bowl
Directions:

Peel the cucumber. Chop it up very fine. Mash it up with a masher. When you mash it, do it firmly but with small controlled gestures, it splatters easily. Mash as much as possible. If it is not fully mashed, mash it up more after its cooked.

Put cucumber in small pot. Heat it up to a low boil, stirring frequently. After it reaches and low boil, add the salt. Boil the water out as much as you can without burning. After the water is boiled out, stir in 1/2 tablespoon and 1/4 teaspoon of the pesto mix along with the other spices and oil. Cook for approximately 4 minutes longer, stirring frequently.

Done. Pour over bedding of pasta or whatever you like.
