Ingredients
Ingredients (use vegan versions):
- 1/2 Sliced onion
- 1/4 diced green pepper
- 1/4 cup Capers
- 1-2 medium cloves minced garlic
- salt and pepper to taste
- oregano, thyme, marjoram, parsley to taste
- 8 oz can of diced tomatoes
- 3/4 cup Boca Burger Basic Recipe (ground)
- casein-free soy parmesan
- pasta of your choice..... penne is quite good!
- 1 tablespoon olive oil for cooking
Cook onions and pepper in oil until soft; add garlic, then capers. Season with salt, pepper and spices. Cook for 2-4 minutes to blend flavors. Add diced tomatoes and a bit more salt. Cook for 1-2 minutes. Add ground Boca Burger and simmer for about 2-3 minutes. Stir occasionally to mix the "meat" with the sauce. Sprinkle a layer of soy parmesan over the sauce, cover and simmer on low until pasta is cooked, drained and ready to eat! ENJOY!
